Ding dang birds is a gettin' my maters just as fast as they start to mature. Just picked a bunch of them, some a bit early, and think I"ll just make salsa out of 'em. Anyone got a quick counter top recipe in a blender or a food processor that would pass as salsa. They are Early Girl and Celebrety tomatoes, not the best for salse, but will do in a pinch. I ain't gonna throw them away. I picked a bunch agreen for friedd green tomatoes, never can find them in the stores.

Towards the end of the season, I pick all my maters green so my wife can make green tomato relish. It's the bomb! I'll take that over pickle relish any day! Once you have a brat or hot dog with green tomato relish, you'll never go back to pickle relish, If you are a relish person. I'll have to get the salsa recipe from my wife and post it later. I know she uses Mrs. Wages seasoning packets, but she also adds to that as well. It's a little on the warm side since she adds diced Habaneros, but that's how we like it.

Instead, we de-seed and dice fresh jalapenos. It is best after being refrigerated over night.

A quick one we make fresh for eating right away is to finely dice 2-3 tomatoes, then add a clove of garlic, one small diced onion, 1-2 diced jalepeno (adjust to your taste), a big bunch of cilantro. Add lime juice to taste, probably 2 tablespoons and a dash of salt and pepper.
If you are good with a knife, finely dice. If you have similar kitchen skills as JDGuru has wimmin skills, please use a food processer. Tastes the same either way.
Let it sit for a few hours and eat. If you're really hungry, eat immediately.
Keep a cold beverage of choice handy.
